When food slowly kills you!
I know this is a bold statement, but before judging, take a moment to read the story.
After years of lower back pain, high level of inflammation and large amount of money spent on chiropractic treatment making no changes to the pain I was experiencing, I decided, with the help of a holistic therapist, to take a different approach. I took a blood test to identify what was creating havoc in my body, and the diagnostic arrived. I had intolerance to 71 of the most 250 common food we, human, eat on a regular basis. The list includes food like blueberry, raspberry, rice, lettuce, garlic, etc… but did not include some of the most common suspects such as gluten, dairy, or peanut. Since a candida yeast overgrowth in the lower intestine was also found I had to eliminate sugar, fermented food, gluten, dairy product in additions to the 71 ingredients. I can safely say, the past six months have been interesting.
I had to rethink how I fed myself or continue to pay the consequences for my actions. Thankfully, I like to cook and already know how to cook healthy food. I just had to adapt with new products I never used before. I even took a dietary class to understand why so many products are bad for you these days. I found out, the product by itself is not the culprit, but the way that product is raised or grown makes a big difference in the quality.
I’ve started collecting recipes, modifying them and keeping track of the one that, not only are satisfying my pallet, but fit my new diet. In six months, the pain in my lower back is mostly gone, inflammations are retrieving, I lost 25 lbs and started running again.
As much as my schedule allow, I will be sharing some of these recipes with you. These recipes are not perfect, but they get the job done. Hope you enjoy them as much as I do.
