Salmon with Fresh Thyme,
Spinach & Herbed Brown Rice Pilaf
It is always a challenge to eat healthy in the evening. I get out of work around 5:00 pm, try to put 30 to 45 minutes of exercise, and run home to make dinner. Last night I got home around 7:00 pm, and made this healthy, low calorie meal in 50 minutes from start to finish.
This recipe is easy to make. It’s all in the sauce.
- Bake the Salmon “En Papillote” (Wrap in foil) in the oven for 30 minutes.
- Make the Sauce:
~ In a sauce pan, add ½ tablespoon of butter, and sautéed 2 shallots until soften
~ Add 3 tablespoons of dry white wine, reduce
~ In a separate bowl, mix 1 tablespoon of unbleached flour with 2 tablespoons of warm water.
~ Add 1 cup of Greek Yogurt to the flour and pour in the sauce pan
~ Add 1 teaspoon of Fresh Organic Thyme
~ Salt and pepper to taste
Cook the sauce for 10 minutes a low temperature.
- Serve the salmon over a bed of steamed spinach, and 1/4 cup of Herbed Brown Rice Pilaf.
